I find parboiling the potatoes first speeds up the air fryer time and gives the potatoes a bit of a starchy coating that will crisp up very well.

If you don't have an air fryer, look for a recipe that doesn't have "air fryer" in the title. There are hundreds of recipes for oven-baked potatoes, many of them on this very site.

Ovens and air fryers are practically the same thing… these come out just as great baked in the oven!

The smoke point of olive oil varies a lot and if it's clear (no residue like in the fancier ones), it should be fine. I've never had issues with olive oil in the air fryer at 400 degrees (or the oven at even higher temperatures).

my lazezy way to coat cut potato (eighth-quadrants) with olive oil or maybe your mustard coating is to chuck all the potato pieces into a plastic bag - toss in a couple of large spoons of olive oil, then massage/toss/turn the bag for 10-20 seconds to coat all surfacestip out the contents on the baking tray or into the air fryer basket - shake to arrange least covered/contact surfaces - and away you go !air fryer for one is a mini-heaven for fatty meats like spring lamb chops or kaiserfleisch

These were great just the way described. I always parboil my oven roasted but this took a lot less time and were delicious. I scooped the potatoes out of the bowl ( no wasted plastic bag) then drizzled the dressing that remained in the bowl just before serving.

A total winner! I cut in half about 10 oz. of baby Yukon Golds and seasoned them with everything but the garlic salt. Did them 18 min in my new 3 qt, 40 buck air fryer. I served them with pan fried baby lamb chops with rosemary and deglazed white wine and butter, green beans almondine. Potatoes were crisp and browned as if they spent considerable time (and grease) in a hot oven.May I say that nothing was left save the bones?

Alisa, it’s a myth that you can’t cook at high heat with olive oil, at least in my experience. We deep fry in olive oil and use it in a very hot oven regularly and never have a problem. Perhaps it’s an issue with poor quality, old (olive oil loses quality pretty fast after opening or a long time on the grocery shelf), or adulterated olive oil. I’m just guessing, since we make our own good olive oil (which is filtered, so no solids to burn) from our own trees and never buy it.

I used small potatoes cut in half with just olive oil and garlic salt. I checked them a few times to be sure they didn’t get overcooked. They cooked in 16 minutes. I found leaving them to sit for a few minutes before eating transformed them to a velvety texture with a crunchy skin. These are as good as potatoes served in a nice restaurant.

I have an inexpensive ($15) wire basket and tray that works exactly like an air fryer. The basket is raised to allow air to circulate over and under. This is excellent especially when cooking other items in the oven. You can easily get the same potatoes while baking 4 chickens breasts, chops or even a pizza! You can wrap the meats in foils with your choice of marinade.

Miranda it is not a myth that you can’t cook olive oil at high temps. If an oil is heated beyond its smoke point, it gives off toxic smoke. The smoke point of olive oil is around 200°C.

Delicious! The potatoes are perfect and the mustard is a nice touch. I was out of Dijon but yellow mustard worked just fine. Would love to see NYT come out with some more air fryer recipes!

New to air frying!…they do taste like they’ve been roasting for hours…8 mins for a small batch. I included lemon pepper and thyme, served w fresh lemon juice atop, reminiscent of Grecian roasted potatoes. How yum and easy! Enjoy!
